摘  要:描述了原木栽培的紫芝的子实体形态 ,并采用扫描电镜观察了紫芝担孢子形态。分析结果表明 :紫芝子实体含水分 12 .49%~ 13 .0 2 % ,粗蛋白为 11.98%~ 13 .87% ,粗脂肪为 0 .81% 1.96 % ,粗纤维为 44 .0 %~47.6 % ,总醣为 7.34%~ 8.10 % ,灰分为 1.0 6 %~ 1.33 % ;其多糖含量为 1.0 6 %~ 1.33 %。紫芝含有钙15 5 0 μg/ g、镁 483μg/ g、铁 180 μg/ g、锌 44 .7μg/g及磷 37.5 μg/ g等人体必需的常量或微量元素。从紫芝中检出 18种常见氨基酸 ,总量为 6 .0 7%~ 6 .38% ,其中必需氨基酸含量丰富 (E/T =0 .5 2 8~ 0 .5 45 ) ;其脂肪酸构成以油酸 (35 .4% )、亚油酸 (43 .5 % )等不饱和脂肪及饱和脂肪棕榈酸 (18.5 % )In this paper, the morphology of log-cultivated Ganoderma sinense is described. Optitial microscopy and electric scanning microscopy were used to study the basidiospore. The analytic results showed that contents of humidity, protein, fat, crube fiber, total carbohydrate and ash in thefruitbodies, were respectively 12.49%~13.02%, 11.98%~13.87%, 1.81%~1.96%, 44.0%~47.6%, 7.34%~8.10%, 1.06%~1.33%; and the content of polysaccharide was 1.06~1.33%. Some essential normal and trace elements were checked up, contens of Ca, Mg, Fe, Zn and P were respectively 1.550μg/g, 483μg/g, 180μg/g, 44.7μg/g, 37.5μg/g. Eighteen kinds of amino acids, totalled 0.06065~0.06375mg/mg, were checked out and the ratios of essential amino acids were 52.8%~54.5% (E/T=0.528~0.545). The fatty acid composition included oleic acid (C18∶1, 35.4%), linoleic acid (C18∶2, 43.5%), palmitic acid (C16∶0, 18.5%) and others, nonsaturated fatty acids made up the majories.
