摘  要:以黄花梨果实为试材 ,测定了经壳聚糖涂膜处理的果实在常温贮藏过程中膜脂过氧化和乙烯生成的变化 .结果表明 :壳聚糖涂膜使果实 SOD活性维持在较高水平 ,L OX活性较低 ,细胞膜稳定性增加、透性变小 ,MDA含量显著减少 ,乙烯释放跃变不很明显且较低 .而对照处理的果实 SOD活性很快下降 ,LOX活性初期和后期较高 ,乙烯释放量较大 ,并在采后第The changes of cell membrane oxidation and ethylene production were measured in Huanghua pear fruit ( Pyrus pyrifolia var ) coated with chitosan at normal temperature storage The results indicated that the activity of Superoxide dismutase (SOD) was relatively strong with chitosan treatments, the activity of Lipoxygenase (LOX) was very weak, the stability of cell membrane became great, the content of Malondialdehyde (MDA) reduced remarkably, the rate of ethylene production was very low and its climax was no distinctness However, the activity of SOD declined rapidly without chitosan treatments, the activity of LOX was extremely strong in early and late fruit storage, the rate of ethylene production was very high and it reached its peak on the 11 th day after being picked
