摘  要:采用微波灭菌和辐照灭菌两种物理方法对蜂花粉中微生物灭菌进行研究 ,结果发现对大肠杆菌的灭菌有效率大于 90 % ,并且可以大幅度降低花粉中细菌总数和霉菌数 .两种灭菌方法对蜂花粉中主要营养素和有效成分的影响中 ,辐照灭菌对维生素C与过氧化氢酶的影响较大 .A comparative study on sterilization of bee pollen by microwave and radiation was carried out.The total number of bacteria (MNP) could be sterilized by the two methods eventually,i.e.,the efficiency is greater than 90% and the coli-group (cfu) and mould (cfu) could be killed greatly.Meanwhile,the effects on nutrients of bee pollen by the two methods were also observed.Vitamin C and hydrogen peroxidase are two important nutrients in pollen.For the radiation sterilization,the content of vitamin C and the activities of hydrogen peroxidase become lower than before.
