摘  要:以3种致腹泻病原菌快速检测方法和国标中3种致腹泻病原菌检测方法对市售海产品、淡水鱼、畜禽冷鲜肉、鸡蛋、熟食中副溶血弧菌、沙门氏菌、金黄色葡萄球菌进行检测。结果表明,快速检测方法检测副溶血弧菌、沙门氏菌、金黄色葡萄球菌的检出率分别为0.66%、0.66%、0.58%;国标方法的检出率分别为0.58%、0.62%、0.49%。快速检测方法的检出率与国标方法相比检出率略高。快速检测方法具有快速、灵敏、简便的优点,可作为食品中致腹泻病原菌的初筛方法。所检测结果由于样品数量原因不具有统计学的意义,但是也提醒广大消费者在采购和食用水产食品、冷鲜肉类、蛋类、熟食产品时需要采取一些卫生措施来避免或减少食品污染、提高卫生意识,通过热处理等方法可有效地杀灭食品中的微生物,减少食物中毒的发生。Fast detection methods and national standard test method were used to determine three pathogenic bacteria causing diarrhoea in the seafood,freshwater fish,meat poultry,eggs.Three pathogenic were including Vibrio paraheraolyticus,Salmonella,Staphylococcus aureus which causing diarrhea.The results showed the positive rate of fast detecting method for Vibrio paraheraolyticus, Salmonella and Staphylococcus aureus was 0.66%,0.66%,0.58%.The national standard test for three pathogenic was 0.58%,0.62%and 0.49%.The positive rate of fast detecting method was higher than national standard methods.The fast detection method has the advantages of rapid,sensitive and simple, and can be used as a preliminary screening method for pathogenic bacteria of diarrhoea in food.The small number of samples leads to no statistical significance.So when we buy these food for eating we can be through the heat treatment method which can effectively kill microorganisms in food,reduce the incidence of food poisoning.
