摘 要:柑橘罐头是柑橘加工的主导产品,也是我国柑橘产业在国际市场上最具竞争力的产品。目前吨产品用水量高达40~60 t,水资源消耗巨大。同时生产用水含有大量的有机物,处理难度大,成本高,对生产企业和生态环境形成双层挑战。本文重点分析柑橘罐头生产过程中各工序用水量以及排放水的感官和理化指标,通过适量用水、分类用水和循环用水等过程优化措施,确定系统性节水方案。该方案实施应用后吨产品耗水量降幅高达41.27%,节水效果突出,经济与生态效益显著。设计研发了PLC节水系统并建成中试示范线。本研究将为我国柑橘罐头产业的可持续发展提供一条绿色途径。Citrus can is the leading product of the processing of citrus in China,and has very strong competitive ability on the international market.Using current processing technologies,the water requirement is quite high,as up to 40-60tons of water is required to produce a single metric ton of canned mandarin oranges.The environment could be severely impacted if the discharged water is not properly treated.To make matters even worse,the discharged water from ctrus can contains large amounts of organic components.Treatment of this type of discharged water is both complex and difficult,and the cost is expected to be very high.It is the enormous challenge before citrus can factory and ecology & environment.The paper focused on the research and analysis of water consumption and the quality indexes of sensory and physicochemical characteristics of every process water in citrus canning production.On the basis of the results obtained from systemic water recycling solution by using the process optimization of moderate amount of water,classification of water and circulation water,per ton product water consumption decreased 41.27%,significant benefits of economy and ecology have been achieved.At the same time;the design &development of programmable logic controller water saving system was implemented and intermediate test producation line was built.So,the study can provide a green way to sustainable development of citrus canning industry in China.
