摘  要:陈香型吞之乎制曲是采用独特的温、湿度控制方法,使其具有陈香味,并可耐高酸发酵的一种新型制曲工艺。通过调节曲坯入室堆积层数、曲坯间距、揭排品温、翻曲时间等工艺参数,新增曲块合大堆工序,并采用提升曲坯顶温、延长贮曲时间等工艺措施,所制陈香曲的曲块外形、断面感观、理化指标、曲块气味等,均明显有别于酱香曲和浓香曲。经窖内发酵90天,所馏基酒稍经贮存即可嗅到幽雅舒适的陈香。The Chen xiang-type tunzhihu starter propagation is a new kind of daqu making process with the unique temperature and humidity control method so as to makes it have the fragrance ofChen and can resist high acid fermentation.By adjusting the process parameters such as daqubilletstackheight,thedistancebetweendaqubillet,temperatureofuncoverandtimeofflipdaqu.Addadaqubilletheapgatheringprocess.Using the process measures such as raising the top temperature ofthe billet and extending the time ofthe storage. Daqu appearance shape and sensory of cross section, physical and chemical indicators, odour of daqu etc., were significantly different from maotai-flavor qu and luzhou-flavorqu.After90 daysoffermentation,evenifthethebaseliquorisstoredashorttimeandcansmellthepleasantfragranceofchen.
