摘  要:为研究鮟鱇鱼加工下脚料中胶原蛋白和硫酸软骨素的综合提取,以下脚料中鱼头为原料,经预处理、脱钙脱脂和除杂蛋白之后,采用冰醋酸和胃蛋白酶法提取鮟鱇鱼骨胶原蛋白(Pepsinsolublecollagens,PSC),接着采用稀碱-盐-酶法制备硫酸软骨素(Chondroitinsulfate,CS),提取得到鮟鱇鱼骨胶原蛋白提取率为36.43%,纯度为89.54%;硫酸软骨素得率为2.21%,纯度为90.13%。并对其进行SDS-PAGE凝胶电泳、傅里叶变换红外光谱(FTIR)、氨基酸分析、扫描电镜、高效液相色谱分析其理化性质分析。结果表明,该方法提取得到的胶原蛋白和硫酸软骨素均很好地保持了完整的天然结构且具有较高的纯度。In order to study the comprehensive extraction of collagen and chondroitin sulfate from the raw material of Lophius litulon processing waste, the pepsin soluble collagens (PSC) was extracted by acetic acid and pepsin after pretreatment, decalcification and degreasing and impurity protein removal. Chondroitin sulfate (CS) was extracted by dilute alkali-sal-enzyme method, and physicochemical properties of bone aquatic collagen and chondroitin sulfate were analyzed by SDS-PAGE, FTIR, amino acid analysis, scanning electron microscopy, and high performance liquid chromatography. The results showed that the PSC and CS extracted from methods mentioned above had good natural structure and high purity.
