摘 要:目的了解2010—2016年郴州市食品中金黄色葡萄球菌(Staphylococcus aureus,SA)的污染状况,为预防食源性疾病提供参考依据。方法 2010—2016年采集郴州市10类共1 194份食品样品,对金黄色葡萄球菌进行监测,对监测结果进行回顾性分析。结果 1 194份样品中检出金黄色葡萄球菌82株,总检出率为6.87%。不同食品类别中即食非发酵性豆制品检出率最高(15.28%),其次是速冻米面食品、肉及肉制品,检出率分别为10.45%和8.65%;食品流通环节中大中型饭店抽检食品金黄色葡萄球菌检出率最高,为12.82%,不同场所食品中金黄色葡萄球菌检出率比较差异有统计学意义(χ~2=25.786,P<0.01);散装食品中金黄色葡萄球菌检出率为8.60%,明显高于预包装食品(3.32%);三季度检出率高于其他季度。结论 2010—2016年郴州市食品中金黄色葡萄球菌污染较为普遍,具有潜在的食源性疾病风险,应针对性地加强食品安全风险监测以预防和控制食源性疾病。[Objective]To investigate the contamination status of Staphylococcus aureus( SA)in fo od in Chenzhou City from2010-2016,provide scientific basis for foodborne disease prevention.[Methods]A total of 1 194 samples from 10 categories of food were collected in Chenzhou City from 2010-2016,to perform the SA monitoring,and the monitoring results were retrospectively analyzed.[Results]82 strains of SA were detected from 1 194 samples and the total detection rate was 6.87%.Among different kinds of food,the detection rate of SA in instant non-fermented bean products was the high est(15.28%),followed by frozen rice food and meat and meat products,which the detection rate was 10.45% and 8.65% respectively.The detection rate of SA in food from large and medium-sized restaurants was the highest(12.82%)in food circulation,there were statistically significant differences in detection rate of SA among food from different sampling sites(χ^2=25.786,P<0.01).The detection rate of SA in unpacked food(8.60%)was significantly higher than that in prepackaged food(3.32%).The detection rate of SA in the third quarter was higher than other three quarters.[Conclusion]The contamination of SA in food in Chenzhou City is widespread,and there is a potential risk of foodborne disease.The targetedfood safety risk monitoring should be strengthened to prevent and control foodborne disease.
