摘  要:摘要:以菠萝渣为原料,采用酸水解法制备水溶性膳食纤维和水不溶性膳食纤维。正交试验结果表明,提取水溶性膳食纤维的适宜条件为:温度80℃,pH2.0,时间90min,原料∶水=1∶10,水溶性膳食纤维提取得率为1.10%(以湿渣计),制得成品色泽呈焦糖色,气味较好;水不溶性膳食纤维提取条件为:温度60℃,pH2.0,时间60min,其得率为5.06%(以湿渣计),成品呈浅黄色,气味淡,其溶胀性高达7.00mL/g,持水力为757%。The dietary fiber was prepared with acid hydrolysis from the pineapple bran.The result of orthogonal experiment indicated that the suitable condition for extraction of soluble fiber was 80℃, pH2.0,taking-time 90min,the proportion between pineapple bran and water 1∶10 And that was 60℃,pH2.0,taking-time 60min for insoluble fiber. The production rates of soluble and insoluble were 1.10% and 5.06%(on the wet basis)respectively.The produce smells well and the color was light.Its expansive capacity were 7.00mL/g and water holding capacity were 757%.
