摘　　要：植物单宁广泛存在于植物体内,是具有重要开发利用价值的天然物质。本文主要综述了植物单宁的自然资源、理化性质、生理特性及其在饮料工业、食品工业、医药化工等工业中的应用现状及研究进展。Tannin, as one of the important natural products, widely exists in plant. This paper aims to discuss the natural resources, physicochemical property, physiological characteristics of vegetable tannin and the development and current situation of its application in the fields of beverage industry, food industry, pharmaceutical chemicals industry and other industries.
