摘  要:目前市场上对葡萄酒的评价多依赖于评酒员的评分,其一定的主观性常误导人们的选择。本研究着眼于酿酒葡萄,通过熵权法筛选出红白葡萄理化指标分别为17个和11个,建立权重模型将葡萄分为6级,并通过检验发现其分级准确性较高,分别为70.37%和85.71%。故可通过检测酿酒葡萄的理化指标,并对其分级来反映葡萄酒品质的好坏。Currently in the market, the evaluation of grape wine mostly depends on wine judge, which is hard to avoid the subjectivity, so it often misleads consumers' choices. In this study, we focused on wine grapes and selected 17 physiochemical indexes for red grape and 11 physiochemical indexes for white grape through entropy method, and further set up weighting model to divide grape into six grades. The verification results proved that such model had high accuracy in grape grading(70.37 % for red grape and 85.71 % for white grape). Accordingly, in practice, we could directly judge grape wine quality through measuring the physiochemical indexes of wine grape.
