摘  要:研究巴州和阿克苏地区所产冬枣在不同气体、不同湿度条件下的耐储性。温度控制在-1℃±0.5℃条件下,用早采与晚采、10%盐水加湿普通贮藏、气调贮藏(O2控制在4%~5%,CO2控制在2%以下)同PVOH透气膜袋保湿贮藏效果进行比较。在80 d的贮藏中,早采果比晚采果在好果率和脆果率方面要高。无论气调贮藏、10%盐水加湿普通贮藏和PVOH透气膜袋贮藏,VC总是有一个先提升后迅速下降的过程,pH下降然后逐渐趋于平行变化。但方差分析VC和pH在p〉0.05水平上差异不显著。早采果耐贮,10%盐水加湿普通贮藏比PVOH透气膜袋贮藏在保湿方面更好,气调贮藏配合适宜的低温和湿度可以减少物质的消耗,将整个代谢水平降低,减缓冬枣果的皱缩、褐变、酒化。The storability ofjujube produced in Bazhou and Akesu areas under different gas composition and humidity were studied. The storability of different harvest maturity (early harvest and late harvest), humidification storage (10% saline water) and control atmosphere storage (02 concentration 4%~5%, CO2 concentration 〈2%) were compared with PVOH breathable film storage under -1℃±0.5 ℃. During the 80 d storage time, early harvest fruits had higher fresh fruit rote and crisp fruit rate than late harvest fruits. In the other three groups, VC content increased at early storage time followed by a sharply decrease, the pH decreased and then maintained at a stable level. But no significant difference were found in VC contents and pH among these three groups (p〈0.05). Early harvest jujube had higher storability, saline water humidified fruits has higher moisture retention capacity. Controlling atmosphere storage with optimum low temperature could decrease the matter loss to maintain a lower metabolism level, delay the shrinkage, browning and alcoholism of jujube.
