摘  要:分别将果实置于0℃、-2℃、-4℃的恒温恒湿箱内处理12h后常温贮藏7d,研究经低温胁迫处理后‘嘎拉’苹果果实叶绿素荧光参数变化与其他生理指标的相关关系。结果表明,低温胁迫处理导致果实叶绿素荧光参数降低以及果实品质下降。叶绿素荧光参数(Fo、Fm、Fv、Fv/Fm)的变化与褐变指数以及果皮色泽(L*、a*、H°)、硬度、可滴定酸、固酸比、质量损失率、相对电导率等品质指标变化密切相关。相比传统的生理和品质指标,叶绿素荧光参数对低温胁迫的响应更加灵敏,叶绿素荧光分析技术可以更加方便、快捷、无损地检测低温胁迫果实并初步预测果实贮藏过程中低温伤害的发生情况和损伤程度。The relationship between fruit freezing injury and chlorophyll fluorescence parameters after the different low temperature stress treatments for‘Gala'apple fruit was studied in this paper.The result showed that low temperature treatment reduced fruit quality and chlorophyll fluorescence relative to control values.Changes in chlorophyll fluorescence parameters(Fo,Fm,Fv,Fv/Fm)were closely related to peel browning index and the change in other quality indicators,such as skin color parameters(L*,a*,H°),firmness,titratable acid,solid acid ratio,water loss rate and relative conductivity.Compared to traditional physical and quality indicators,chlorophyll fluorescence parameters is more sensitive in response to low temperature stress,chlorophyll fluorescence analysis can be more convenient,fast,non-destructive to detect low temperature stressed fruit and initially predict the occurrence and severity of injury during storage.
