摘 要:目的研究黑果小檗色素提取液的理化性质及稳定性。方法采用颜色反应、溶解性实验、pH值调节、高温和光照等,观察色素的理化性质和稳定性。结果黑果小檗色素易溶于极性大的溶剂;在不同pH条件下,随pH值增大颜色逐渐变浅,碱性条件下,色素分子结构发生改变;不同光照条件下,黑暗条件贮存效果最好,室内自然光条件下贮存较稳定,室外直射光下极不稳定;加热120 min,80℃以下保存率较高,温度愈高、加热时间愈长,色素稳定性愈差。结论黑果小檗色素为水醇兼溶性色素,主要成分为花色苷类化合物,碱性条件、光照、高温影响色素稳定性。Objective To study the physieochemical property and stability of the pigment in Berberis heteropoda. Methods The physicochemical property and stability of the pigment was observed by colour reaction, solubility test, pH adjustment, heating and illumination. Results The pigment in Berberis heteropoda was easily dissolved in the solvent with strong polarity. With the increased pH, the color of Berberis heteropoda decreased. The molecular structure of pigment could change under alkaline condition. The storage result was best in darkness. The stability of pigment was better under indoor natural light condition. In contrast, the pigment was extremely unstable under outdoor sunshine condition. The retention rate of pigment was higher below 80 ~C after heating for 120 min. The stability of the pigment was declining along with the higher temperature and the longer heating time. Conclusion Berberis heteropoda pigment can be soluble both in water and in alcohol. The major ingredients are anthocyanins. The stability of pigrnent can be influenced by alkaline condition, light and high temperature.
