摘　　要：花青素是一类广泛存在于植物的花、果、茎、叶和种子中的水溶性天然色素,具有很高生物活性的黄酮多酚类化合物,对人体无毒副作用。近年来,众多学者对花青素做了较为详细深入的研究。回顾了目前花青素的研究成果,力求为进一步研究开发花青素生物活性提供资料。Anthocyanin is a kind of flavonoid polyphenols with high biological activities,and it is widely distributed in plants flowers,fruits,stems,leaves and seeds of the water-soluble natural pigments in nature.In recent years,many researchers have done a lot of in-depth studies on anthocyanin.This paper summarizes the physiological role of anthocyanins research,and strive to provide information for the development and further study the biological activity of anthocyanins.
