摘  要:【目的】优化芒果皮中芒果苷的提取工艺,并研究芒果苷的抑菌性,为芒果的综合开发与利用提供科学参考。【方法】以芒果皮为材料,通过单因素试验和正交试验,考察乙醇体积分数、料液比、微波功率和提取时间对芒果苷提取效果的影响,并采用Kirby-Bauer纸片扩散法分析芒果苷的抑菌性。【结果】影响芒果皮中芒果苷提取效果的因素顺序为:乙醇体积分数>提取时间>微波功率>料液比,其最佳提取工艺条件为:以70%乙醇为提取溶剂,在微波功率600 W、料液比1∶10条件下提取15 min,芒果苷提取量为4.622 mg/g;提取的芒果苷对大肠杆菌、金黄色葡萄球菌和白色念珠菌均具有一定的抑菌作用,其中对大肠杆菌和金黄色葡萄球菌的最低抑菌质量浓度均为1.250 mg/mL,对白色念珠菌的最低抑菌质量浓度为0.625 mg/mL。【结论】微波提取是提取芒果皮中芒果苷的有效方法;芒果苷具有一定抑菌性。【Objective】The extraction process of mangiferin from Mangifera indica L.(mango) peel was optimized and the antibacterial activity of extracts was detected to provide references for comprehensive utilization of mango and its by-products. 【Method】The effects of volume fraction of ethanol, liquid ratio, microwave power and extraction time on extraction of mangiferin from mango peel were researched using single factor and orthogonal experiments and the antibacterial activity of mangiferin crude extracts was detected by disc diffusion method of Kirby-Bauer(KB). 【Result】The order of factors influencing mangiferin extraction from mango peel was volume fraction of ethanol〉extraction time〉microwave power 〉liquid ratio. The content of mangiferin was 4.622 mg/g under the optimum conditions of 70%ethanol extraction, 600 W of microwave power, 1:10 liquid ratio and extract time of 15 min. Furthermore, the mangiferin crude extract had strong antibacterial activity to E.coli, S.aur and C.alb. In addition, minimum inhibitory concentration of the mangiferin crude extract to E.coli and S.aur was 1.250 mg/mL, and to C.alb was 0.625 mg/mL.【Conclusion】Microwave-assisted extraction is an effective method for mangiferin extraction from mango peel and mangiferin had antibacterial activity in some extent.
