摘  要:目的了解石家庄市市售果脯中铝的含量。方法在部分超市、批发市场随机抽取果脯样品,用电感耦合等离子体质谱法测定铝含量。结果从超市采集的果脯铝含量在0.21~9.25mg/kg之间;批发市场采集的果脯铝含量在3.10~851.OOmg/kg之间,有近50%的果脯铝含量在60.00~851.00mg/kg之间。结论部分果脯的铝含量很高,是由于在加工过程中加入了含铝膨松剂的缘故。建议尽快制定果脯蜜饯食品铝含量的国家标准,规范果脯的加工过程。Objective To determine the content of aluminum in preserved fruit sale in Shijiazhuang city.Methods Preserved fruit samples were randomly selected in some supermarkets and wholesale markets, the determination of aluminum content were determined by inductively coupled plasma mass spectrometry. Results Aluminum content of preserved fruit collected from the supermarket was between 0.21 -9.25mg/kg, aluminum con- tent of preserved fruit from wholesale market was between 3.10 -851.00mg/kg, there was nearly 50% of aluminum content of preserved fruit between 60 - 851mg/kg. Conclusions Aluminum content of some preserved fruit is very high, because of the adding aluminum leavening agent during the work piece process. It is recommended to formulate the national standard on aluminum content in preserved fruit food as soon as possible, and to standardize the work piece process of preserved fruit.
