摘  要:用差式扫描量热仪(DSC)对椰子油和棕果油进行热力学分析,研究混合油脂的热力学特性变化与棕果油掺杂量之间的相关性。结果显示,椰子油和棕果油的DSC图谱具有显著性的差异。随着棕果油的添入,混合油脂吸热峰的左侧逐渐出现一个新峰,同时峰值温度(T_(peak))、峰尾温度(T_(end))以及融化焓(△H)也均呈现出逐渐降低的趋势。一元线性回归分析发现,T_(end)、T_(peak)和△H3个变量与棕果油掺杂量之间呈现出了良好的线性关系,其中利用△H对掺杂量进行甄别的可靠性最大,可决系数(R^2)为0.997 2。DSC分析是甄别椰子油中棕果油掺杂的一个有效方法,具有便捷、快速以及准确性高等特点。Thermodynamics of coconut oil (CO) and palm fruit oil (PFO) have been analyzed by DSC to study the correlation between thermodynamic characteristics alteration and the mixing quantity of PFO.The results showed that CO and PFO were significantly characterized by different heating DSC thermal profiles.Peak maxima T,end set T and melting enthalpy from heating thermogram tapered off as the PFO content had increased Moreover besides this,a smaller shoulder peak embedded in the major peak which had gradually smoothed out to the major peak.A unitary linear recursive analysis demonstrated a good linear relation between Tpea,Tend or △H and PFO content.△H of actual value expressed against PFO content with coefficient of determination (R2) of 0.997 2.The preliminary results in this study have suggested that the DSC analysis may be a useful method for detecting adulteration of CO with PFO for the convenient and fast advantages with high veracity.
