北方浓香型白酒生产中糟醅对己酸乙酯含量的影响

摘　　要：对影响浓香型白酒中己酸乙酯含量的糟醅因素从原料与辅料、生产工艺参数、操作要点及卫生要求等方面进行了探讨,初步得出了稳定提高原酒质量的各项措施。通过落实这些措施所生产的原酒的己酸乙酯年平均含量达到了320 mg/100 mL以上。The distiller＇s grains factors influencing ethyl caproate content in Nongxiang Baijiu（liquor） such as raw materials and auxiliary materials, production technical parameters, operating points, sanitary requirements, etc. were investigated to preliminarily determine the measures for improving the quality of base liquor. The practice of those measures could achieve the average ethyl caproate content in base liquor up to 320 mg/100 mL.
