摘  要:利用多孔碳材料修饰玻碳(GC)电极检测油炸类食品中的抗氧化剂叔丁基对苯二酚(TBHQ).6.40μg/mL的TBHQ在不同电极上的差分脉冲伏安结果表明,经多孔碳修饰后,氧化峰电流从8.01μA增加到19.67μA,提高了145.45%,说明多孔碳材料具有较高的催化活性,能促进电极表面的电子转移,加快反应速率,使修饰后的电极灵敏度增加.TBHQ的氧化峰电流与其浓度在1.60~14.40μg/mL范围内呈现良好的线性关系,检出限为0.23μg/mL,相关系数为r=0.998.用该方法检测薯片中TBHQ的含量,回收率为96.72%~99.14%.A glassy carbon (GC) electrode modified by porous carbon was used for the detection of tertiary butyl hydroquinone (TBHQ). The differential pulse voltammetry results of 6.40 μg/mL TBHQ on different electrodes showed that the oxidation peak current increased from 8.01 μA to 19.67 μA (improved by 145.45%) after modification. The results indicated that the porous carbon had high electrocatalytic activity, and could improve electron transfer on the electrode surface and increase reaction speed so as to improve sensitivity of the modified electrode. The oxidation peak current of TBHQ was proportional to its concentration within 1.60 g/mL to 14.40 μg/mL, with a detection limit of 0.23 μg/mL (r=0.998). The modified GC electrode was applied to the TBHQ detection of potato chips, with a recovery rate of 96.72% to 99.14%.
