摘 要:研究花椒籽油的水代法提取工艺流程及其相关技术条件。以最大出油率、α-亚麻酸和亚油酸的最大含量及最低酸值为3个量化指标,探讨花椒籽皮油处理、油分离与纯化方法以及研究降低油脂乳化的技术。通过一系列单因素试验和多因素分析试验,得出较为合理的工艺试验值。结果表明,皮油处理时最佳NaOH浓度为0.20 mol/L;水代法提油的最佳料液比为1∶1,水浴温度为62.5℃,搅拌速度为60 r/min,提取时间为60 min;消除乳化的最佳试剂选用80%乙醇和0.36%盐酸,最终出油率为25.70%。该工艺其他条件与现有其他工艺的相关条件基本相同。The aim of this study was to optimize the aqueous extracting process for high quality oil from prickly ash seeds. Maximum yield of oil, maximum content of alpha-linolenic acid and linoleic acid and the lowest acid value were used as quantitative indicators to investigate the oil of pepper seed skin processing, the kernel oil separation and purification methods, as well as lipid antioxidation technology. Through a series of single factor test and multivariate analysis, a more reasonable process was as follows: optimum NaOH concentration was 0.20 mol/L in peel oil processing; the best solid-liquid ratio was 1/1 in oil extraction by water with water bath temperature of 62.5℃ and stirring speed of 60 r/min, the extraction time was 60 min; 80% of ethanol and 0.36% of hydrochloriC acid were the best reagent selection to eliminate emulsion, the final oil yield was 25.70%. The other conditions of the process are basically the same as other existing process.
