摘 要:[目的]为高职学生实验《多酚氧化酶的制备和性质研究》筛选合适的实验材料。[方法]选取马铃薯和紫薯比较研究块茎与块根中多酚氧化酶(PPO)的活性、最适底物、最适温度等特性。[结果]两者PPO最适底物均为邻苯二酚;马铃薯PPO的最适反应温度为35℃,紫薯PPO的最适反应温度为10℃。[结论]经综合比较,该实验以马铃薯作为实验材料更为合适。[Objective] The objective of this study was to choose ideal experiment material for the students' experiments-The Making and Natures Study of Polyphenol Oxidase(PPO) in higher vocational education.[Method] The potato and purple potato were selected to study some natures of PPO,including its activity,optimum substrate and optimum reaction temperature.[Result] Both of their optimum substrates were Catechol.The optimum reaction temperature of potato was 35 ℃,while that of purple potato was 10 ℃.[Conclusion] After comprehensive comparison,potato was more ideal as experiment material than purple potato in this experiment.
