摘　　要：金针菇含有蛋白、多糖、挥发性物质等多种成分。本文对金针菇作为食品添加剂、医药用品的应用以及金针菇中所含有的锌、碘、硒等元素的开发利用现状进行了总结,阐述了金针菇作为食品和医药用品的开发方向,对金针菇食品的开发前景进行了展望。Flammulina velutipes contains multiple functional ingredients,such as protein,polysaccharides,and volatiles,etc.This paper reviewed the current application situation of Flammulina velutipes when serving as food additive and ingredient in pharmaceuticals,and the development and utilization status of zinc,iodine,and selenium in Flammulina velutipes.The paper explored the trend and direction of exploitation of Flammunila velutipes in food and medicine areas,and prospected the development of Flammuling velutipes.
