摘 要:综述了采后病原菌侵染过程中果实产生的细胞和亚细胞形态结构抗性的变化、病原菌-寄主果实互作过程中结构抗性变化在抵御病原菌侵染中发挥的作用,以及壳聚糖、紫外照射、热处理、拮抗菌等外源处理对采后果实细胞结构抗病性的增强作用,展望免疫标记等技术的应用,将有助于人们深入了解果实抗性生化代谢与细胞形态结构性变化的关系及其在果实抗病过程中的作用。This paper summarized the morphological changes of sub- and ultra-structure of fruit cells and their function on defending postharvest infection in the process of pathogen-host mutual interaction. The paper also summarized the effects of the main exogenous treatments including chitosan, ultraviolet irradiation, heat treatment and antagonistic microorganisms on the enhancement of sub- and ultra-structural resistance of fruit cells against the attack by postharvest pathogens. It also prospected the application of the immunolabelling technique and so on would help people deeply understand the biochemical metabolism of fruit resistance and structural change of cell morphology and their functions in disease resistance process of fruit.
