摘  要:以南眉籽为试材,研究测定了南眉籽的抗氧化活性及其微量元素含量。并将南眉籽烘干、粉碎,制备南眉籽乙醇提取物,测定提取物对羟基自由基(·OH)和超氧阴离子自由基(O2·)的清除率,并与维生素C进行比较。结果表明:南眉籽乙醇提取物的抗氧化活性与维生素C基本相同。将南眉籽粉末进行消解,用电感耦合等离子体发射光谱仪(ICP-AES)测定微量元素含量。检测出南眉籽中主要含有6种微量元素,含量分别为Sr 71.5μg/g、Fe 58.7μg/g、Mn25.7μg/g、Cu 20.7μg/g、Si 17.2μg/g、Zn 16.8μg/g。所以在食品中添加南眉籽能补充6种微量元素。Taking basil seed as materials, the antioxidant activity of basil seed and the determination of its trace elements were studied. After being dried and grinded, basil seed were extracted with alcohol. Then the clearance rates of the extracting solution for hydroxyl radical ( · OH) and superoxide radical (O2-) were tested as well as compared with that of vitamin C. The results showed that the antioxidant activity of basil seed was nearly equal to that of vitamin C, it suggested basil seed had certain antioxidant activity. The trace elements in basil seed had also been determined with inductively coupled plasma atomic emission spectrometry (ICP-AES) in the paper. Analytical results showed that basil seed contains six trace elements,i, e. ,Sr(71.5μg/g) ,Fe(58. 7 μg/g) ,Mn(25.7 μg/g) ,Cu(20. 7 μg/g) ,Si(17. 2 μg/g), and Zn(16. 8μg/g). Consequently, basil seed was capable to supply the six trace elements for foods.
