摘  要:山东大地原始先民饮食具有嗜咸的特点,这为酱的开发利用奠定了需求基础。酱制食品尤其是鲁菜是酱对山东饮食文化影响的典型代表。山东人在制酱、吃酱、用酱、论酱过程中形成了独具特色的酱文化,它反映了山东人的高超智慧、技艺和人文精神,也反映了齐鲁文化和儒家文化的深刻内涵。山东酱文化的核心元素是"和",基本特征是"和谐秩序、仁义诚信、开放进取、雍容大度"。山东酱园文化、酱商精神的核心元素是"仁",基本特征是"忠厚仁爱、勤劳朴实、崇尚信誉、物美价廉"。山东酱商企业必须牢牢把握山东酱文化、酱园文化、酱商精神的核心元素和基本特征,建设企业文化,提升企业文化软实力,打造企业文化品牌,增强企业核心竞争力。Salt was preferable by ancestors in Shandong,which account for the demanding of sauce. The sauced food,especially Shandong cuisine,is characterized by Shandong food culture. Typical sauce culture was formed during the process of sauce production and consuming,which reflects the high intelligence,technology and humanism of Shandong,and the connotative meaning of the Qilu culture and the Confucian culture. The harmony is the core element of Shandong sauce culture,known as the features of the ' harmony,kindheartedness,honesty,open- mind,ambition and generosity'. The ' kindness' is the fundamental element of sauce industry and merchant,whose characters are ' earnest,kindness,hard- work,frugality,honesty,cheapness and fineness'. The core element and fundamental character of sauce culture,sauce industry and spirit of sauce merchant must be followed by sauce enterprise,so as to construct the enterprise culture,to enhance the soft cultural power,to build culture brand and to increase key competence of enterprises.
