摘 要:研究使用AOCS Ca 2c-25、AOAC 984.20和GB/T 5528—2008三种方法对脂肪粉的水分含量进行测定,以确定国内外不同的检测方法是否会导致水分测定结果的差异。通过对同一样品8平行结果对比分析,确定AOCS Ca 2c-25和GB/T 5528—2008两种方法间没有显著差异,AOAC 984.20卡尔费休法稳定性和重复性相对较差。通过对AOAC 984.20卡尔费休法测定中的滴定度的确定和样品进样方式的改进,提高了该法的稳定性。改进后的结果与前两种方法基本一致。Three methods(AOCS Ca 2c-25,AOAC 984.20 and GB/T 5528—2008)were used to determine the moisture content of fat powder in this research.The purpose of the study was to find out whether different determination methods,using in China and beyond,could cause different results in terms of the moisture content.To this end,eight parallel results of the same sample were compared by using above mentioned methods.There was no significant difference between the methods of AOCS Ca 2c-25 and GB/T 5528—2008.The stability and reproducibility of AOAC 984.20 Karl Fischer method was relatively low.Thus,determining the titer and changing the sample injection method were applied to improve the stability of the method.Its result was basically identical with that from the former two methods.
