摘  要:采用微滤和超滤结合制备乳清蛋白浓缩物80(Whey protein concentrate,WPC80),所制得的WPC80中α-乳白蛋白质量分数占总蛋白的64.37%。本研究采用0.2μm的聚偏氟乙烯去除甜乳清溶液中的脂肪和酪蛋白等,使得脂肪质量分数由0.15%降低至0.03%;比较分析了p H值为4.30时,乳清溶液50 ku聚偏氟乙烯和50 ku聚醚砜对α-乳白蛋白和β-乳球蛋白的分离效果,其中50 ku聚偏氟乙烯的平均膜通量和α-乳白蛋白的得率都显著低于50 ku聚醚砜,但α-La纯度和对α-La的选择透过性(即α-La/β-Lg)显著高于50 ku的聚醚砜,综合考虑,50 ku的聚偏氟乙烯更适合于生产高α-La质量分数的WPC80。Used in combination with microfiltration, ultrafiltration membranes can be used to produce α -lactalbumin-enriched whey protein concentrate 80 with 64.37% of α-La content. In this study, 0.2 μm polyvinylidene fluoride microfiltration was used to produce a prepurified feed that was devoid of casein fines, lipid materials, and aggregated proteins, and the fat content decreased from 0.15% to 0.03%. Ultrafiltration membranes of 50 ku Polyvinylidene fluoride (PVDF) and 50 ku Polyethersulfonel (PES) were compared in the enrichment of α -lactalbumin (α -La) to the permeate from whey solutions which pH were adjusted to 4.30. Both membrane flux and α -La yield of 50 ku Polyvinylidene fluoride (PVDF) were significantly lower than 50 ku Polyethersulfonel, while the purity of α -La and ratio of α -La/ β -Lg were significantly higher than 50 ku Potyethersulfonel. Considering the economic conditions, 50 kn Polyvinylidene fluoride (PVDF) was more suitable to produceα -lactalbumin-enriched whey protein concentrate 80.
