摘  要:卤鹅是荣昌县的特色食品。为了了解荣昌县卤鹅的卫生状况,随机选取了荣昌县城内十家卤鹅销售点销售的卤鹅进行了微生物指标检测。检测结果表明荣昌县卤鹅普遍存在初始菌落总数和大肠菌群超标现象,特别是流动摊点销售的产品卫生状况更差,所有卤鹅样品在保存至7 d后菌落总数全部超标。Spiced goose is characteristic food of Rongchang. In order to understand the hygienic status of the commercially available spiced goose in Rongchang County, ten sale spots were randomly selected and the microorganism index was detected. The result showed that hygienic status of goose in Rongchang County were generally poor, especially the spiced goose sold by mobile stalls which the total number of colonies and Coliform bacteria were seriously exceed the standard. All samples of total number of colonies exceed the standard after 7 d.
