摘 要:为充分利用蜂花粉资源,采用酸提工艺提取蜂花粉可溶性膳食纤维,利用单因素试验和响应面优化法对液料比、浸提p H值、浸提温度、浸提时间工艺条件进行分析与优化,并测定蜂花粉可溶性膳食纤维的理化指标。结果表明,蜂花粉可溶性膳食纤维酸提最优工艺为:液料比10.8∶1(m L/g)、浸提p H值4.3、浸提温度50℃、浸提时间1.9 h,在此工艺条件下蜂花粉可溶性膳食纤维得率为7.31%,膨胀力0.87 m L/g、持水力1.33 g/g、水溶性84.78%。In order to fully utilize bee pollen resource, the soluble dietary fiber from bee pollen was extracted using acid extraction process. The process conditions of liquid-to-solid, extraction pH, extraction temperature, extraction time were analyzed and optimized by single-factor experiment and response surface methodology. The physicochemical properties of bee pollen soluble dietary fiber were measured. The optimal extraction conditions were determined as follows 10.8:1 (mL/g) of liquid-to-solid, pH4.3, extraction temperature 50 ℃, extraction time 1.9 h. Under the conditions, the yield of bee pollen soluble dietary fiber was 7.31%, swelling capacity was 0.87 mL/g, water holding capacity was 1.33 g/g, and the water- solubility was 84.78%.
