摘　　要：目的用数字化自动电位滴定仪测定甜面酱中氨基酸态氮方法进行了探讨。方法用Lab X软件建立数字化的操作界面,并设置甜面酱中氨基酸态氮的各项参数进行数字化自动电位仪滴定的测定。结果数字化自动电位滴定仪甜面酱中氨基酸态氮的测定结果与国标法比较差异无显著性,相对标准偏差是1.74%。结论数字化自动电位滴定仪测定甜面酱中氨基酸态氮实现了实验过程全自动化的操作界面,具有简便﹑快速﹑准确﹑高效的优点。Objective： Determination of amino nitrogen sweet bean paste methods are discussed using digital automatic titrator. Methods： Establish digital interface with Lab X software, and set the parameters of sweet sauce amino nitrogen were measured in digital automatic potentiometric titration instrument. Results：Digital automatic potentiometric titrator sweet sauce in amino acid nitrogen determination with GB method was no significant difference between the relative standard deviation is 1.74 %. Conclusion： Digital automatic potentiometric titrator amino nitrogen determination sweet sauce in the experimental process to achieve a fully automated interface with simple and accurate, fast and efficient advantages.
