摘　　要：在理论和实践研究的基础上,从"食品掺伪检验"实验课程的实际情况出发,从四个方面提出了教学改革措施:讲授与以问题为导向等教学法有机结合的实验教学方法,强化指导和细节监控等实验教学环节,设计对比实验等实验形式,增加实验操作考试等考核方式。以期提高实验教学的质量,提高学生的创新能力。Based on the theoretical and practical studies, from the practical situation of the experimental course of adulterated food identification, teaching reforms are carried out in four aspects：experimental teaching method of the organic combination of teaching and problem oriented teaching method, teaching links of strengthening guidance and monitoring experiment, experiment forms of designing contrast experiments and assessment method by operation test, to improve the quality of experiment teaching and students＇ innovation capability.
