摘　　要：研究了一种快速测定乳及乳制品中羟脯氨酸含量的方法,该方法水解时间缩短为15min,分光光度法比色定量,方法的定量限为0.05μg/m L,具有良好的重现性,精密度RSD〈4%,加标回收率为95%~105%,研究数据表明该方法可以快速准确鉴定出乳及乳制品中是否添加了皮革奶。A rapid determination method of hydroxypmline in milk and dairy products was descripted in this paper, and the hydrolysis time was reduced to 15 min. Spectrophotometric method was used for quantitative determination, with lowest limit of determination is 0.05 p,g/mL, and have a good linear relation, with good test repeatability. RSD was less than 4% and the recovery ratios were between 95% ~ 105%. Therefore, this method can determine that whather the leather milk was added and how much of the addition in milk and dairy products,
