摘  要:目的调查厦门市居民的水产品膳食结构,获得其水产品摄入量数据,为评估重金属及持久性有机污染物经水产品膳食摄入所产生的健康风险提供依据。方法在厦门岛内和岛外通过"知情同意书"筛选调查对象850名,运用食物频率问卷法(FFQ),进行面对面膳食史回顾调查,并对调查结果进行分析。结果食用人数超过50%的水产品为紫菜、海带、花蛤、海蛎干和鱿鱼,人均日摄入量最高的5种水产品包括花蛤、黄翅鱼、海带、鲈鱼和海蛎。结论 850名厦门市居民的水产品主要摄入类别为鱼类、贝类、藻类和虾类,人均日摄入量高于国内外平均水平,岛内高于岛外。不同性别、不同年龄组基本上无明显差异。OBJECTIVE To investigate the dietary structure of aquatic products for Xiamen residents, obtain their consumption data of aquatic products, and provide the evidence for evaluating health risks from the intake of aquatic products with heavy metal pollutants and POPs. METHODS 850 people who signed the "informed consent form" were choosen as the objects. A face-to-face investigation on the history of their intake of aquatic products through food frequency questionnaire (FFQ)was conducted during the survey. RESULTS More than 50% of the objects ate seaweed, kelp, flower clam, dried oyster, and squid. The top five aquatic products, flower clams, yellow fin fish, seaweed, bass, and oysters, had the highest average consumption. CONCLUSSION The main intake of aquatic products of the 850 people were fish, shrimp, shellfish and algae. Per capita daily aquatic products intake of Xiamen residents was higher than the domestic and international average level, and per capita daily aquatic products intake of the people on the island was higher than the people off the island. There was no difference between male and female or between the young and the old.
