鄂东素菜兴盛的原因探析

摘　　要：鄂东地处吴头楚尾,物华天宝,人杰地灵,交通便利,丰富的素菜食材为鄂东素菜的兴盛提供了坚实的物质基础。鄂东作为禅宗的发源地,佛教文化浓郁;受黄老之学的影响,道教的群众基础也极为深厚,善男信女秉持宗教的素食主义,于日常生活中予以贯彻并发扬光大。加以鄂东的书院文化、儒学文化、医学文化非常发达,人们信奉"耕读传家"、"吃得菜根,百事可为。"坚持食蔬以求修身养性、淡泊明志,使茹素有了深厚的思想文化根基,这三种因素的结合推动了鄂东素菜的兴盛,使得鄂东素菜在我国素菜领域占有一席之地。Located on the borders between the two kingdoms Wu and Chu（ of the Spring and Autumn Period in ancient China）,Eastern Hubei,is a land of attractive resources and magical power as well as a birth place of creative minds and gifted talents with convenient transportation. The abundant vegetarian food materials provide a solid material basis for the prosperity of Eastern Hubei vegetarian dishes. As the birthplace of Zen Buddhism,Eastern Hubei has full-bodied Buddhist culture; affected by the theories of the emperor huang and lao tzu,Eastern Hubei also has extremely deep mass base of Taoism. Upholding religious vegetarianism,believers of Buddhism and Taoism follow out it and make it flourished in daily life. In addition,due to the well developed Academy Culture,the Confucian culture as well as the medical culture in Eastern Hubei,people believe in ＂ Cultivation and read to bequeath to the family ＂,＂if a man can eat edible vegetable roots,he can do all sorts of things. ＂People insist on eating vegetables in order to form self-cultivation and show high ideals,which forms a profound ideological and cultural root to make people abstain from meat. The combination of the above three factors contribute to the rise of Eastern Hubei vegetarian dishes,which makes Eastern Hubei vegetarian dishes win a place in the field of Chinese vegetarian dishes.
