摘　　要：以酱香型白酒为样本,对其理化指标进行分析,利用SAS软件,采用Logistic回归方法建立了酱香型白酒理化指标的数学模型,从而定量地分析了各理化指标对酱香型白酒香型特征的影响,并进行模型统计分析,充分说明各特征成分对酱香型白酒品质特征产生怎样的影响。In this paper, Maotai -flavor liquor was selected, the impaction of physicochemical indexes on the quality of liquor is analyzed . By SAS software and Logistic regression method, the mathematical model of Maotai -flavor liquor with physicochemical indexes is established, which gives the influence of each physicochemical indexes of Maotai -flavor liquor by quantitative analysis. And the statistical analysis of the model is obtained, which shows how the aroma components of Maotai-flavor liquor affects.
