摘  要:目的了解石家庄市面制食品中铝污染情况,对石家庄市居民的健康饮食进行指导。方法对超市、农贸市场及路边摊点的馒头、面包、挂面、蛋糕、油条、烧饼等进行抽样检测。用电感耦合等离子体质谱仪对铝元素进行测定,评价按GB 2762-2005面制食品中铝限量指标进行。结果抽检的182份食品中,方便面、饼干、挂面(超市)铝含量均符合国家卫生标准;油条铝含量超标率是100.0%,馒头铝含量超标率为55.0%,烧饼铝含量超标率为61.9%,蛋糕铝含量超标率为17.6%,面包铝含量超标率为19.0%。居民每日从面制食品中摄入的铝量:馒头为26.1 mg,油条为227.4 mg,面包为11.0 mg,烧饼为30.5 mg,蛋糕为27.6 mg,素丸子为44.1 mg,饼干为1.2 mg,方便面为1.0 mg,挂面为1.8 mg。结论石家庄市居民日常食用的面制食品中铝含量超标现象已非常普遍,应引起有关部门的高度重视。建议食品加工企业在加工过程中使用无铝复配膨松剂,保证人们的身体健康。Objective To understand the situation of aluminum pollution in food market in Shijiazhuang city,provide health guidance to Shijiazhuang residents ' healthy diet. Methods To conduct sampling detection for steamed buns,bread,noodles,cake,and baked rolls in supermarkets,farmers market,and roadside booths Detection methods of aluminum elements were determined by inductively coupled plasma mass spectrometry,evaluation was conducted according to GB 2762-2005 of aluminum in flour food limited indexes. Results Among 182 food samples,the aluminum content of instant noodles,biscuits,noodles( supermarket) are in line with national health standard; the aluminum content exceed the standard rate is 100% of fried bread stick,the aluminum content exceed the standard rate of 55% of steamed buns,the aluminum content exceed the standard rate of 61. 9% of baked rolls,the aluminum content exceed the standard rate is 17. 6% of cake,the aluminum content exceed the standard rate of 19% of bread. The amount of aluminum intake from the flour food daily:steamed buns of 26. 1 mg,fried bread stick of 227. 4mg,bread of 11. 0mg,baked rolls of 30. 5mg,cake of 27. 6mg,meat balls of 44. 1mg,cookies of 1. 2mg,instant noodles of 1. 0mg,noodles of 1. 8mg. Conclusions The phenomenon of aluminum content exceed the standard has been very common of resident daily consumed flour food in Shijiazhuang city,should pay high attention to the related departments. Suggest using no aluminum compound with raising agent during the process for food processing enterprises,to guarantee people's health.
