摘  要:亚硝酸盐是食品添加剂中的一种,但它是一种有毒物质,含量高会危害人的身体健康,为了解乌兰察布市售腌制蔬菜中亚硝酸盐的含量。利用722型分光光度计测定了不同厂家的4种金针菇与同一厂家的9种酱腌菜中亚硝酸盐的含量,实验结果表明:酱腌菜中亚硝酸盐的含量>金针菇中亚硝酸盐的含量,但所测定的13种腌制蔬菜中亚硝酸盐含量均未超标。Nitrite is a kind of food additive, but it is a toxic substance, high content would endanger human health, we want to know about the content of nitrite from pickled vegetables in the sale of Wulanchabu city.The contents of nitrite in 13 kinds of preserved szechuan pickles were determined by spectrophotometric method.The results showed that the content level of nitrite were all below the Chinese National Food Standard in the preserved szechuan pickles, but the contents of nitrite in pickled was more than that in needle mushroom.
