摘  要:用DSC(差示扫描热量法)分析了虾青素的最适储藏温度和氧化稳定性,并且用红外光谱仪检测了虾青素热处理前后结构的变化,然后通过体内细胞检测了人体对虾青素的最大耐受量以及体外抗氧化比较了不同方法得到的精油清除DPPH的能力,结论:虾青素的最适宜贮藏温度为-25℃左右,贮存条件应为低温、避光,防止与空气接触。同时通过DSC检测精油中虾青素的氧化诱导期实验发现:当精油置于25℃空气中,氧化诱导期为8.5d,当温度为4℃,氧化诱导期为29.89d,当温度为-4℃,氧化诱导期为48.3d。红外光谱分析虾青素热氧化前后结构的变化发现:氧化之后共轭双键、芳香环上C=C,及芳香环上的的C=O、O-H、六元环仲醇C—O键发生变化。虾青素在人体的最大耐受量5×10^-6mol/L,超临界(Scf),微波萃取(Mae),索式抽提(Sox)方法得到的精油清除DPPH能力Mae〉Sef〉Sox。using DSC analyzed the most suitable storage temperature and oxidation stability of astaxanthin,infrared detected changes in the structure of astaxanthin before and after the heat treatment, and then detected human body ' s maximum tolerated dose and antioxidant of astaxanthin through the cell. Using different methods to get astaxanthin oil and compared their ability to clean DPPH. Conelusion:astaxanthln optimum storage temperature is about -25 ℃, storage conditions should be cold,dark and protected from air. From DSC detection of oxidation' s oxidation induction period in oils, this paper found that when oils placed in the air at 25 ℃, oxidative induction period is 8.5 d, when the temperature is 4 ℃, oxidative induction period is 29.89 d, when the temperature is -4 ℃, oxidative induction period is 48.3 d. Infrared Spectral analysis found that astaxanthin conjugated double bends and aromatic ring' s C = C, aromatic rings' s C = O and O-H, six-membered cyclic secondary alcohols' s C-O changes after thermal oxidation, The maximum tolerated dose of astaxanthin in human body is 5 × 10^-6 mol/L,comparison of astaxanthin oil gotten by supercritical fluid(Scf) and the microwave-assisted extraction(Mae) ,cable-extraction(Sox) ,their ability to clean DPPH is MAE 〉 SCF 〉 SOX.
