摘 要:建立了微波消解-电感耦合等离子体质谱法(ICP-MS)检测绿茶中矿物质和微量元素的方法,实验表明:该法在测定茶叶中的金属元素方面简便、可靠,且具有较高的精密度和准确度。通过对产自不同产地绿茶样品中的14种金属元素进行定量分析,发现不同产地茶叶中,Mg元素含量均最高,其次为Ca和Mn。同时,对绿茶中元素浸出率分析,发现4个产地绿茶均以Mg和Mn的浸出率较高,其中福建产绿茶Mg的浸出率达到61.23%。A method for determination of some minerals and trace elements in green tea by inductively coupled plasma-mass spectrometry (ICP-MS) with microwave digestion was developed. The results showed that this method in the determination of minerals and trace elements in terms of green tea is simple, reliable, and has a higher precision and accuracy. After the green teas produced in different regions for quantitative analysis of 14 inorganic elements, it can be found that the concentrations of all elements varied among these green teas. Mg, Ca and Mn were found at the highest concentrations in all green teas. Meanwhile, the element concentrations in green teas infusions were determined to assess the actual amount of exposure to these elements by drinking these beverages. The results showed that the percent releases of Mg and Mn were detected at the highest levels in all green teas produced in different regions. The highest percent release of Mg in Fujian green tea infusion was 61.23%.
