摘  要:选择福建省栽培规模较大的食用菌-茶树菇作为研究对象,在培养料中人为添加一定量的铅、镉、汞、砷等4种有害重金属,研究这4种重金属在茶树菇栽培过程中的富集和迁移规律,结果表明:培养料中重金属含量直接影响茶树菇子实体中重金属含量,并随着培养料中添加量的增加而增加;在未人为添加重金属的情况下,生产的茶树菇产品符合绿色食品标准,是安全的;茶树菇对铅、镉、汞、砷等4种有害重金属的元素富集能力各有差异,依次为汞>镉>铅>砷。汞在茶树菇栽培过程中的富集和迁移能力最强,当栽培料中汞添加量为0.1mg·kg-1时,茶树菇对汞的富集系数最高,达到241.9%。To optimize the mushroom cultivation and minimize heavy metal migration from the medium to the fruiting body,Agrocybe cylindracea was used in this study.The migration patterns of lead,cadmium,arsenic and mercury from the spiked media to the mushrooms were monitored.The results showed that the content of the heavy metals in the mushroom fruiting bodies significantly correlated with that in the medium.Grown in the control medium,the fruiting bodies of the mushrooms contained these heavy metals within the limits for " green foods" as specified by the national standards.The metal contents in mushroom increased as the amount of the heavy metals were increased in the spiked media.It was also found that the heavy metal retention rates of A.cylindracea differed according to the order:mercury〉cadmium〉arsenic〉lead.When mercury was added at a rate of 0.1 mg/kg to the medium,up to 241.9 percent accumulation of the metal in the harvested mushroom fruiting bodies was found.
