玉米纤维胶在乳液中的应用研究

摘  要:玉米纤维胶(CFG)是从玉米纤维中碱提出来的一类多聚木糖,可应用于乳化剂、增稠剂等。根据提取步骤不同,可以分为CFG–1、CFG–2。该研究从乳液显微观察、乳液浊度、乳液粒径三个方面,对比分析CFG–1、CFG–2、辛烯基琥珀酸淀粉钠(PG2000)、阿拉伯胶乳液7 d后的变化。结果表明:CFG–2与PG2000的乳液颗粒分散均匀且粒径小,7 d后粒径变化幅度不大,乳液稳定性好;CFG–1与阿拉伯胶的乳液颗粒尺寸略大,7 d后乳液浊度波动明显,粒径变化较大。CFG可成为一种优良的乳化剂,替代阿拉伯胶应用于乳液研究,其中CFG–2更优于CFG–1。Corn fiber gum(CFG)is a kind of polyxylan alkali extracted from corn fiber,which can be used as emulsifiers,thickeners and so on. It can be divided into CFG–1 and CFG–2 according to different extraction. This study analyzed the variation of four kinds of emulsion of CFG–1,CFG–2, PG2000,arabic gum from aspects of microscopic observation of the emulsion,the emulsion turbidity and emulsion particle after 7 days. The results showed that emulsion particles of CFG–2 and PG2000 were small and dispersed well,their particle size changed slightly after 7 days,and they had good emulsion stability;The particle sizes of CFG–1 and arabic gum were larger and their emulsion turbidity fluctuated significantly after 7 days,and their particle size changed obviously. CFG could become an excellent emulsifier in emulsion research to replace arabic gum,and CFG–2 was better than CFG–1.
