摘 要:介绍了新疆烤馕装置的研究现状,对比了新疆现有的烤馕装置的特点,并分析了不同装置存在的问题。提出了要将高效、节能、环保放在第一位,将馕的烘烤工艺与烤馕设备结合起来,提高烤馕设备的自动化和智能化。设计烤馕装置时要充分考虑烤馕效率、馕的品质、节能减排,要解决卫生条件差、劳动强度大、自动化程度低、环境污染严重等问题,为新疆烤馕装置的设计研究提供了有价值的参考依据。The research status of Xinjiang roasted Nang device was introduced, the characteristics of current roasted Nang device were compared, the problems existing in different devices were analyzed. It was put forward that efficient, energy saving and environmental production should be in the first place, eombined euring teehnique with device to improve automation and intelligence of roasted Nang equipment. The design of roasted Nang device should fully consider efficiency, quality, energy saving and emission reduction, the problems of poor sanitation, high labor intensity, low degree of automation, serious environmental pollution should be solved, which provides valuable reference for the design and research of roasted Nang device in Xinjiang.
