摘 要:为了优化蛋黄卵磷脂中胆固醇的去除工艺,建立适合大规模生产低胆固醇蛋黄卵磷脂的工艺流程,试验采用薄层色谱法和皂化比色法定性和定量测定胆固醇,利用β-环状糊精(β-CD)的包埋吸附作用去除胆固醇,研究不同条件参数对胆固醇去除率的影响。结果表明:10 g鲜蛋黄液经乙醇萃取卵磷脂后添加1.6 gβ-CD,常温下混合搅拌10 min,5 000 r/min离心10 min,得到的卵磷脂制品胆固醇去除率可达99.00%。To optimize the removal technics of cholesterol from the lecithin in egg yolk, and establish a suitable technological process for mass production of low - cholesterol lecithin of egg yolk. The thin layer chromatography and saponification colorimetric method were used to qualita-tively and quantitatively determine the cholesterol, and the adsorption arid embedding effects of β-cyclodextrin ( β- CD) were utilized to remove cholesterol, while the effects of different conditional parameters on the removal rate of cholesterol were studied. The results showed that the removal rate of was cholesterol from the lecithin product could reach 99.00% when the lecithin that was extracted from 10 g fresh egg yellow liquid after using ethanol extraction, was added with 1.6g β- - CD by mixing and stirring for 10 min at room temperature, followed by 5 000 r/min centrifugation for 10 min.
