摘  要:糖类是自然界生物生长和繁殖的重要能量源,许多多糖还具备多种生理功能及药用价值,而许多金属元素在人和动物体内参与多种生命活动,对人和动物的生长发育必不可少。糖类物质和金属元素的利用仍存在许多问题,而利用金属元素修饰糖类化合物,能够使糖类物质的功能多元化,并优化金属元素的吸收利用,降低其毒副作用。本文根据国内外研究现状,综述了利用金属元素修饰糖类及修饰过程的强化,阐述了铁、铜、锌等金属元素对糖类的修饰机理及方法,修饰后糖类物质在结构上和功能上的变化及原理,以及修饰过程的强化方法和机理。本文通过综述,总结了一些目前需要解决的问题,并对未来利用金属元素修饰糖类的研究发展方向进行了展望,以期对今后相应的研究工作有所帮助。Carbohydrate is an important energy source of biological growth and reproduction. Many polysaccharides also have varieties of physiological functions and medicinal value. Many metal elements can be involved in many vital activities essential to the growth of human and animal. There are still many problems in the usage of carbohydrate and metal elements, and modified carbohydrates with metal elements could diversify the functions of polysaccharide, optimize the uptake of metal elements, and reduce their toxic side effects. According to the domestic and foreign present research situation, we summarized the modification of carbohydrate by metal elements and the process intensification. The modification mechanism and method of iron, copper, zinc and other mental for polysaccharide were descripted. The structure changes of polysaccharide and function after being modified and its mechanism as well as the modification process were also discussed. Through reviews, we summarized some problems needed to be solved currently, and discussed the development of research direction of saccharide modification by mental elements in order to provide some information for the related research in the future.
