摘  要:对来自江西吉水东京野茉莉40个家系种子的可溶性糖、淀粉、可溶性蛋白及粗脂肪含量进行分析,并测定其中10个家系种子油脂肪酸组分。结果表明,东京野茉莉种仁可溶性糖含量为37.84-86.25 mg/g,淀粉含量为5.87-27.86 mg/g,可溶性蛋白含量为56.04-271.26 mg/g,粗脂肪含量为554.5-635.4 mg/g。种子油中主要有5种脂肪酸,以不饱和脂肪酸为主,占80.76%-85.62%,其中含量最高的亚油酸是人体必需脂肪酸,含量为47.32%-50.81%。由此可见,东京野茉莉具有较高的营养价值和广阔的开发前景。With the aim of revealing the nutrient composition of seed, we detected the content of soluble sugar, starch, so- luble protein and fat in Styrax tonkinesis seeds from 40 different families,and determined the fatty acid profiles of 10 fami- lies' seeds among the 40. Results showed that the content of soluble sugar was between 37.84-86.25 mg/g, starch was be- tween 5.87-27.86 mg/g,soluble protein was between 56.04-271.26 mg/g,fat was between 554.5-635.4 mg/g. And five fatty acids were identified in the seed oil ,80.76% -85.62% of which were unsaturated, with linoleic acid, one essential fa- tty acid, between 47.32% -50.81%. In conclusion, S. tonkinesis seeds present a potential value in exploitation and utiliza- tion for nutrition.
