摘 要:目的了解嘉兴市2003年-2012年猪肉与可食内脏在生产和消费过程中存在的主要安全隐患,为食品安全的监管提供科学依据。方法分析10年送检的猪肉及可食内脏样品的检测结果及与肉品有关的食物中毒报告,比较不同年份不合格样品的波动情况及与食用猪肉及可食内脏相关的食物中毒报告病例三间分布的变化趋势。结果 2003年-2012年共检测猪肉与可食内脏样品1 591份,10年检出的不合格率范围为0.00%~14.16%,期间出现2个波峰,年份间不合格样品检出高低情况呈交替波动状态。10年中与食用猪肉及可食内脏相关的食物中毒20起,86.70%的病例发生在食堂及餐馆。结论违法使用兴奋剂作饲料添加剂,检测未纳入畜肉日常监测管理中,执法方面存在漏洞。未得出食用病死猪肉引发食物中毒,与采样时间短、冬春季气温低等因素有关。Objective To illustrate the main hidden hazards in the consumption of pork and edible viscera in Jiaxing from 2003 to 2012 and provide scientific basis for food safety supervision. Methods Analyzed inspection result reports of pork and edible viscera samples and meat - related food poisoning reports submitted in the past 10 years, compared fluctuations of unqualified samples in different years with corresponding changing trends of pork and edible viscera related food poisoning cases. Results 1 591 samples of pork and edible viscera were inspected from 2003 to 2012, the range of unqualified rate was 0.00% - 14.16% in ten years and with two peaks. Fluctuation of unqualified samples was alternating in different years. There were 20 food poisoning events related to pork and edible viscera in 10 years, of which 86.70% cases happened in refectories and restaurants. Conclusion Illegally using stimulants as feed additive supplement is not included in regular supervision for meat of domestic animals; there are defects in law enforcement. No evidence shows that food poisoning caused by eating pork from pig died of disease relates to factors of short sampling time, low temperature in winter and spring etc.
