摘 要:目的探讨清远市餐饮从业人员卫生知识水平其影响因素,为进一步做好从业人员卫生知识培训提供依据。方法采取整群抽样的方法抽取清远市在职餐饮从业人员916人,用自行编制的调查问卷于2013年10—12月进行卫生知识的知、信、行调查。结果从业人员对卫生知识总的知晓率为69.21%(634/916),卫生态度正确持有率为87.45%(801/916),卫生行为正确形成率为78.82%(722/916)。卫生相关知识知晓率受调查对象的年龄、文化程度和所在单位食品安全级别等因素的影响,差异有统计学意义(Waldχ^2值分别为14.131、14.852、25.388,P〈0.05)。结论清远市餐饮从业人员卫生知识水平仍需提高,低学历、无安全级别的餐饮单位、年龄小于20岁和大于40岁以上的的从业人员是我市今后卫生知识培训的重点对象。[Objective] To study the health knowledge level and its influencing factors among catering trade employees in Qingyuan City, provide the scientific basis for further health knowledge training in this population. [ Methods ] 916 catering trade employees were collected in Qingyuan City by cluster sampling, and the health knowledge, attitude and behavior (hereinafter referred to as KAP) was investigated by the self-made questionnaire from October to December 2013. [Results] The total awareness rate of heahh knowledge in catering trade employees was 69.21% (634/916), while the correct rate of heahh attitude and formation rate of health behavior was respectively 87.45% (801/916) and 78.82%(722/916). The awareness rate of health knowledge was influenced by age and education level of employees, as well as the food safety level of catering enterprise, and the differences were statistically significant (Wald X2 value was respectively 14.131, 14.852 and 25.388, P〈0.05). [Conclusion] The health knowledge level of catering trade employees need to be improved. The professional health knowledge education should pay more attentions on the employees with low education level, working in catering enterprise without safety grade, and younger than 20 years old and older than 40 years old.
