摘　　要：以大豆油、玉米油、OPO结构脂、二十二碳六烯酸(DHA)藻油和二十碳四烯酸(ARA)藻油为原料,以母乳中主要脂肪酸含量为黄金标准,采用气相色谱质谱联用(GC-MS)方法测定原料中的油酸、亚油酸、亚麻酸、花生四烯酸和二十二碳六烯酸含量,用以建立模型,优化婴幼儿配方乳粉中脂质的配比。通过这一模型可调制出近似于母乳脂质的含有5种主要脂肪酸的调和油。采用气相色谱质谱联用测定调和油的脂肪酸组成,其检测结果与标准母乳营养成分比较发现,该调和油中的5种主要脂肪酸含量与母乳中的脂肪酸基本一致,可满足婴幼儿正常生长对脂质的需求。The raw materials are soybean oil, corn oil, OPO structural fat, DHA algal oil and ARA algae oil. The method used to optimization the content of infant formula is established, which could determination of oleic acid, linoleic acid, linolenic acid, arachidonic acid and docosahexaenoic acid in oil. The blend oil could be deployed by this model to meet the demand of the five major fatty acids in breast milk. While the measurement result of oil shows that the content of five major fatty acids which compared with the theoretical calculated values has reached the content of the corresponding requirements.
