摘 要:手工精酿啤酒相对于大型啤酒厂的成品啤酒,具有品种多样、品质高端、与餐饮休闲文化契合度高、无包装及运输成本等特点,虽然我国手工精酿啤酒目前仍然存在酿造设备标准化程度不高、原料和工艺控制粗糙,国家层面缺少产品统一标准与配套的食品安全法律法规等因素,但伴随我国啤酒消费者个性化需求的不断提高,手工精酿啤酒和餐饮休闲文化的高度契合,必将成为我国未来个性化啤酒消费与绿色餐饮的主力军。Manual craft beer compared with the ready -made beer in large brewery has a lot of features such as diversity of species, high quality, high degree of catering to the leisure cul- ture, without the cost of packaging and transportation, etc. Although the present manual craft beer in China is using the low standard equipment to brew beer, the raw material and the rough process control, lack of a unified national level products and a coordinated food safety law and regulation, with Chinese beer consumers 's personalized demand constantly improve, manual craft beer caters to leisure culture, it will certainly become the main force of future personalized beer consumption and green dining in China.
